Consistency matters more than the exact words: “Email”, “email” and “e-mail” are reported as three different mediums. That is why values are made lower case by default. Do not tag links between pages of your own site, because that overwrites where the visitor originally came from.

They do not change rankings. Make sure pages have a canonical tag so tagged addresses are not indexed as duplicates.
